Cornbread Wannabe (AKA Cauliflower Souffle)

Most of the Americans just celebrated the Thanks Giving Holiday. And, as we are accustomed when we celebrate, we eat. We eat slightly different than on a regular day, perhaps slightly more.

Today’s post, however, is not about why we do that or should we do that. Today’s post is about the menu I put together for my family on Thanksgiving Day. It was not the traditional Thanksgiving menu you are probably familiar with (as my husband and I are not born and raised in the US, we are not accustomed to eating a “thanksgiving dinner”,) however, I did prepare some dishes I would not make every day (as they are more elaborate and time-consuming).

So, here’s the “celebratory menu.” You can steal it and make it as is, or parts of it when you feel like eating just a bit different than on a regular day, yet you don’t want to stray away from eating whole healing foods.

Staying or getting healthy with whole foods doesn’t = deprivation or tasteless food.

I’m sharing with you the entire menu today and each week I’ll post a recipe from it, as I don’t want to overwhelm you:), some of the recipes are easy but some of them are complex and time-consuming. So make sure to com back for the other recipes.

And the celebratory menu…

  • Chicken breast stuffed with “zacusca,” covered in bacon and baked to perfectionthe-celebratory-plate
  • Cornbread wannabe (HINT: it has nothing to do with corn, except that it is yellow)
  • Braised Brussels Sprouts
  • Green Salad
  • Garlic mashed potatoes (for my boys:)
  • Next day-appetizer (bonus) Dracula’s Stuffed Eggs

Today I will share the “Cornbread wannabe” recipe. It’s one of my favorites and it might become yours too.

Cornbread Wannabe

ingredients

Directions:

  1. cut cauliflower in about 1-inch size pieces and steam it for 3-5 min (it should be al dente)
  2. grate the cheese and set it aside
  3. break 4 eggs in a bowl and beat them with an egg beater
  4. place the steamed cauliflower on a baking tray (I suggest using parchment paper-see images below)
  5. add the cheese on top (spread it over the cauliflower in a uniform layer)
  6. pour the eggs over and bake @350 F for 20-30 min (after 20 min you can check and see if it’s getting golden in color and the edges start to separate from the paper then it’s ready to serve)

Makes 4 servings (approximate 190 g).

What is great about this dish?

  • Aside from the incredible taste, it is very versatile-you can have it as is, or with a salad.
  • It can be a side dish, part of a full meal, or a quick snack.
  • It’s delicious hot as well as cold, and
  • It reheats perfectly.

Of course, if you are following a low carb/keto, anti-inflammatory and gut healing diet you should be jumping up and down with excitement, as it fits your healing plan perfectly. It’s a dish you are going to fall in love with.
